For years, I wasn't always sure about my pounding form of mochi rice cake.
My uncle is the one whose form is exactly what I'd like to copy.
The main problem has been that the meeting point at the surface of mochi is always different.
Finally today, I came to realize that I'm always bending my knees when I strike down the mallet.
When I tried not to, the meeting sound became different.
It had crispier slapping sound than before.
More importantly, the meeting point in the stone pot became more consistent.
I got the gist of it at the last batch.
I hope to remember the technique until next year...
